Chocolate with Alcohols

As with any other ingredient, try to buy the best-quality liquors and liqueurs you can find, as this can directly affect the flavor of the final chocolate. If a recipes calls for Grand Marnier, use Grand Marnier, not a orange-flavored Cognac or a knockoff. When using bourbon, use and aged variety that is well known. Basically, only use an alcoholic ingredient that you would enjoy drinking.
