Step One: Prepping the Chocolate

Place approximately 75 percent of the chopped chocolate called for in the recipe into a glass bowl. Keep in mind you will be adding more chocolate to the bowl after the initial amount is melted; use a large enough bowl so that you are able to stir easily without spilling its contents. The remaining 25 percent of chocolate should be chopped further into smaller pieces and set aside to be used during the "seeding" process, the step that takes place after melting.
