Tip: Melt and Temper Chocolate

During this part of the process, if I am using a candy thermometer, I generally leave it in the bowl as i stir the chocolate. That way i can keep an eye on how the temperature of the chocolate fluctuates. When using a digital thermometer, simply take the temperature reading after incorporating each handful of chopped chocolate.
